Turkish Green Beans in Olive Oil (Zeytinyağlı Taze Fasulye)
Ingredients:
500 g fresh green beans (trimmed and halved if needed)
1 large onion (finely chopped)
2 medium tomatoes (peeled and grated or finely chopped)
2–3 garlic cloves (minced)
1/2 tea glass (about 50 ml) olive oil
1 teaspoon sugar
1 teaspoon salt (adjust to taste)
1/2 tea glass (about 50 ml) water (can be increased if needed)
Instructions:
Sauté onion and garlic: In a pot, heat the olive oil over medium heat. Add chopped onions and garlic, and sauté until soft and slightly golden.
Add tomatoes: Stir in the grated or chopped tomatoes and cook for a few minutes until they release their juice and begin to thicken.
Add green beans: Add the green beans to the pot and stir well to coat them with the tomato mixture.
Season: Sprinkle in the salt and sugar. Pour in the water.
Cook on low heat: Cover the pot and cook on low heat for about 30–40 minutes, until the beans are tender and fully cooked.
Cool and serve: Remove from heat and let it cool to room temperature. Serve cold or at room temperature with an extra drizzle of olive oil if desired.
