1. Naturalness of the color (unpainted olive green)
The biggest misconception is that Gemlik olives are supposed to be deep black. Genuine Gemlik olives actually turn darker at the stem.
Tip: The color is not uniform. It can range from dark purple to brownish-black. If the olive is artificially deep black and very shiny, chemical dyes (such as ferrous gluconate) were probably used. Uncolored black olives are a sign of naturalness.
2. Texture and structure
Gemlik olives have a thin skin and are fleshy.
Tip: The skin shrinks, especially when using the saddle method. When squeezing the olive, the flesh separates easily from the pit, which is a sign of quality. Avoid olives that are too hard or too soft, such as doughy olives.
3. Taste profile
It has a balanced saltiness and a distinct fruity aroma.
Tip: If you only taste salt or a metallic taste when you try them, these olives have probably been industrially processed.
4. Geographical indication and labelling
The geographical indication guarantees that the product is actually produced in the Gemlik region and according to established standards.
Tip: Look for the "Geographically Indicated Gemlik Olive" logo on packaged products. The list of ingredients should only include olives, salt, and oil.
